The Place

Our client has a 5* exclusive venue nestled in the beautiful breathtaking scenic countryside of Scotland where they host individual guests, private dining and events of the utmost quality in inspiring and unique surroundings.

 

The Job

As Sous Chef, you will be involved in the entire culinary experience, including their world-renowned restaurant. You will deputise in leading, motivating and developing the kitchen team to consistently deliver a 5-star standard of service and ensure the highest quality of food is delivered. You will help the Head Chef create world-class menus that align with the brand and inspire guests.

  • Monitor and maintain consistent food standards and quality and all compliance for food hygiene and health and safety is adhered too
  • Communicate daily the business needs to the Kitchen team and attend operational meetings
  • Manage the day-to-day running of the kitchen including rotas, stock rotation and ordering, food budget and cost controls in the absence of the overall Head Chef
  • Train and develop the kitchen team  
  • Recruit and onboard new staff to ensure a great candidate journey and retention and the company is securing the best talent

 

The Person

The successful Sous Chef for this role will come from a 5-star, Michelin / Rosette quality kitchen in the past where they have inspired others and are pastry-focused.

  • Inspire the team to engage in the full spirit of the organisation and venue
  • Be a leader, leading by example, from the front and pioneering the best quality dishes and food experiences, always showing professionalism and integrity
  • Motivate the team, conduct regular 1:1s and support their development / facilitate training to become the best they can be and to deliver the best quality of food and service
  • You will be an experienced Sous Chef with an exceptional talent for creating and a meticulous eye for detail
  • You will be proficient in menu planning and sourcing food and products locally and always reaching for what is in season
  • You will be experienced in kitchen management and team development
  • You will have the ability to work under pressure and demonstrate initiative and problem-solving abilities
  • You will be a team player who can collaborate with all departments and key stakeholders and collaborators to drive the success and reputation of the business

Unfortunately, no sponsorship is available for their role as is Live-in accommodation so own transport is essential as is commutability.
