In September, Glasgow's culinary landscape will expand with the opening of Margo, a new dining establishment headed by the accomplished team behind the city's renowned restaurants, Ox and Finch, and Ka Pao.
Robin Aitken, Glasgow native and experienced chef, who first joined Scoop Restaurants as a member of the Ox and Finch kitchen team back in 2014, will lead Margo's kitchen.
Aitken, who had spent some time away traveling and working internationally, re-joined Scoop in Scotland as a member of the senior team at Ka Pao Glasgow. Under his guidance, this Glasgow establishment earned its first Michelin Bib Gourmand recognition. Concurrently, Ox and Finch proudly displayed their award for the 10th consecutive year.
At Margo, Aitken will create a seasonally-driven menu featuring snacks, small plates, and sharing dishes that highlight curated produce sourced from local growers and makers.
The evolving menu will emphasize flavour with a focus on Scottish seafood, in-house butchered meat, and scratch-made bread and pasta.
Dessert choices at the restaurant will feature renditions of time-honored puddings such as Baked rice pudding crème caramel, Lemon and sorrel posset, Blackberry and fennel meringue, and Chocolate nemesis crafted with local chocolate from Bare Bones.
The beverage program encompasses five intriguing options: signature frozen martinis, yoghurt punch, inventive takes on classic cocktails, and a wide-ranging wine selection showcasing top-shelf and artisanal bottles.
With seating for 138 guests, Margo is set to debut at 68 Miller Street this coming September.
Through partnerships with artisans in the area, we've produced customized furniture and woodworking for this site, combining architectural ironwork, conventional clay coating, ceramic and terracotta flooring, and reclaimed lighting fixtures to generate a cozy, inviting atmosphere with a hint of industrial flair.
